White dry
A Chardonnay from the Limarí Valley, where calcareous soils and the cool coastal climate are more important than the influence of oak. De Martino produces this wine from Chardonnay grown in clay-rich limestone soils, while ageing in used oak barrels gives the wine a broader texture without overshadowing the character of the grape variety and the site.
The nose combines citrus and white-fleshed stone fruit – lemon, peach and apricot – with nutty, vanilla and subtle mineral notes. With time in the glass, the wine develops greater textural depth and spice, while the fruit remains relatively restrained.
On the palate, the wine combines a dry, fuller body with bright acidity and mineral freshness. Peach and citrus flavours are complemented by nutty and lightly creamy notes, while the limestone soils of Limarí are reflected in the saline, mineral finish. Here, oak contributes more to the texture than to the aromatic profile.
The wine is aged for 12 months in used oak barrels; previous technical specifications for Legado Chardonnay also indicate fermentation in used French oak with yeast and partial malolactic fermentation.
Serve at 10–12 °C; pair with roasted chicken with lemon and herbs, trout sautéed in butter, or creamy risotto with mushrooms.
