Produttori del Barbaresco Barbaresco Riserva Pajé 2020 is one of the most elegant and refined wines of the Produttori del Barbaresco Riserva series, originating from the legendary Pajé cru, located in the heart of the Barbaresco commune. This vineyard is renowned for its ability to combine aromatic subtlety, precise structure and exceptional longevity. The producer himself describes Pajé as a wine that, even over the years, retains its characteristic florality, fruity freshness and vertical structure.
The aroma reveals notes of dried rose petals, violet blossoms, cherries and strawberries. They are complemented by eucalyptus, licorice, white pepper, dried herbs and subtle balsamic nuances. As the wine opens in the glass, layers of leather, spices and minerality emerge, giving the aroma an exceptional complexity.
The wine is elegant, yet concentrated, with lively acidity, fine and extremely precise tannins and a pronounced mineral character. The aftertaste is long, fresh and harmonious, revealing the classic Pajé cru balance between fruitiness, structure and terroir expression.
After fermentation, the wine is aged for 36 months in large oak barrels, and then additionally matured in the bottle.
Serve at 16-18 °C. Food pairing: veal osso buco, beef cheek, duck, truffled pasta, wild mushroom risotto, mature hard cheeses.
The Pajè vineyard faces the Tanaro River and is tucked at back of a narrow theater of vines. The site is often characterized by a floral note of rose and violet that comes thought nicely in the Produttori del Barbaresco 2020 Barbaresco Riserva Pajè. With those sweet floral notes comes an open-knit mouthfeel and a more immediate drinking style with soft, silky tannins. In fact, this was the second of nine wines served in a flight that started with the lightest Riservas and ended with the most powerful wines.
Produttori del Barbaresco, founded in 1958, now has 51 members and controls more than 100 hectares of premium Nebbiolo vineyards in Barbaresco. Each family is in full control of its land, growing Nebbiolo grapes with centuries old skill and dedication. The vinery produces a Barbaresco DOCG, a blend of Nebbiolo grapes harvested from different vineyards, and a simpler Nebbiolo Langhe suited for earlier consumption. In great vintages, nine single-vineyard Barbarescos are produced from nine classic premium sites within the Barbaresco village boundaries: Asili, Rabajà, Pora, Montestefano, Ovello, Pajè, Montefico, Muncagota, and Rio Sordo. These are the geographical names of sites where Nebbiolo grapes have always been cultivated. The name of the single-vineyards, the total number of bottles produced, and the name of the owners of the vineyards are marked on the labels. Produttori del Barbaresco, which vinifies only Nebbiolo grapes, produce around 550 000 bottles per year. In a good vintage they are divided among Barbaresco (50%), single vineyard Barbarescos (30%) and Nebbiolo Langhe (20%).
