The character of Corvina is closely tied to the climate and winemaking traditions of Northern Italy. This grape expresses itself best in its historic growing sites:
Valpolicella: The limestone and volcanic soils here provide the wine with elegance and minerality. It is this specific place of origin that dictates Corvina's dominance, forming the backbone of local blends.
Thanks to its unique thick skin, Corvina is perfectly suited for the appassimento (grape drying) method. As the berries dry in special lofts, water evaporates, concentrating the sugars and aromas, thereby creating the powerful Amarone and rich Ripasso wines.

Flavor Profile: Red Cherries, Violets, and Silk

  • Aroma: Pure and seductive. Basic wines burst with sour cherries, strawberries, and floral notes. More mature or dried-grape wines (Amarone) reveal accents of dark chocolate, plum jam, figs, and dried tobacco leaves.
  • Structure: Classic Corvina wine features a light to medium body, low tannins, and bright, refreshing acidity. However, when the drying technique is applied, the wine's body becomes viscous, heavy, and exceptionally rich.

Frequently Asked Questions

Is Corvina wine the same as Valpolicella?

Partially, yes. Valpolicella is a wine region and appellation whose wines are blends. Corvina is the most important and valuable grape in this blend (usually making up 45–95% of the wine), providing it with structure, aromas, and quality.

Can you find pure, 100% Corvina wine?

Although historically it has always been blended with other varieties (such as Rondinella or Corvinone), today modern winemakers are increasingly producing 100% varietal Corvina wines (often labeled as IGT Veneto). These allow you to experience the unveiled, pure cherry character of this grape.
