Castillo de Canena “Amontillado” – an exceptional gourmet olive oil where the freshness of early-harvest ‘Arbequina’ meets the deep and complex character of aged Amontillado sherry (Jerez).
This is a premium extra virgin olive oil, cold-extracted from ‘Arbequina’ olives and refined in Amontillado sherry casks that are more than half a century old. For this unique creation, an American oak barrel from the Amontillado solera of one of Spain’s most renowned producers, Lustau, was selected. Inside these casks, the oil absorbs the complex aromas left in the wood by long-aged wine, creating a remarkable fusion of two outstanding gastronomic worlds – extra virgin olive oil and sherry wines.
This oil stands out not only for its production method but also for its distinctive profile, where the softness of the ‘Arbequina’ variety gains additional depth, structure, and expression. “Amontillado” opens up a new gastronomic experience – subtle yet multilayered, suitable for both classic and creative cuisine.
On the nose, it reveals notes of toasted nuts, noble woods, ripe fruit, and mushrooms, accompanied by the characteristic saline and aged nuances of Amontillado wine. On the palate, the oil remains elegant and harmonious, while the influence of the sherry cask expands its presence and creates a long, refined finish.
Thanks to its complex and expressive profile, this olive oil pairs beautifully with roasted or baked fish, poultry, pork, mushrooms and porcini, beef carpaccio, shrimp or tuna tartare, grilled foie gras, pâtés, meat pies, cured fish, roe, shellfish, oysters, and other seafood. It also creates a surprisingly excellent pairing with dark chocolate and nuts.
