White dry
A wine from the tiny 0.35-hectare “Puits St Pierre” plot on the Château-Chalon hillside, where the south-facing exposure and limestone-rich soils give the Savagnin its mineral character. This is a classic Château-Chalon Vin Jaune, shaped not only by the grape variety but also by its long ageing under a layer of yeast.
In the glass, walnut, dried and candied fruit emerge first, followed by spices, curry, saffron and subtle roasted notes. The aromatics are intense but constantly evolving, becoming richer and more complex with time.
On the palate, the wine is dry, full-bodied and concentrated, yet retains a good sense of freshness. Fresh walnut, dried fruit and spice are complemented by a mineral texture, while the acidity provides tension and prevents the wine’s concentration from becoming overly weighty. The finish is long, nutty and spicy.
Savagnin is the sole grape permitted in the Château-Chalon appellation for the production of Vin Jaune. The wine is aged in oak barrels for a minimum of 6 years and 3 months without topping up. During this time, a layer of yeast known as voile forms on the surface of the wine, giving it its characteristic nutty and spicy aromatic profile. After this extended ageing, the wine is bottled in the traditional 62 cl clavelin bottle.
Serve at 14–16 °C; pairs perfectly with chicken in a cream sauce, aged Comté cheese, and creamy risotto with wild mushrooms.
Domaine Rolet was founded in 1942 by Désiré Rolet before being passed on to his children. Today, the Domaine's vines average 45 years old and span 65ha across the Jura region of Eastern France, with vineyards in the AOCs of Arbois, Cotes du Jura, l'Etoile, and Chateau-Chalon.Classic Jura varieties are planted across steep slopes on appropriate soils; Chardonnay (light marls), Savagnin (grey marls), Poulsard (red & blue marls), Trousseau (heavy gravels) and Pinot Noir (light marls). Vines are tended through organic farming practices, and hand-harvested each year producing yields between 15-50 hl. Further sorting ensures that only the best quality grapes are seen through to barrel. Most wines are aged for around 18 months in oak, replacing a quarter of their barrels each year.The resulting wines have gained the Domaine a reputation for excellence with wine professionals and drinkers alike with their purity and concentration.
