Ribeira Sacra (translating to "Sacred Riverbank") is famous for what is known in the wine world as heroic viticulture (viticultura heroica). Vines are planted on impossibly steep, terraced stone slopes originally built by the Romans and monks centuries ago. Because of the extreme gradient, machinery is entirely impossible—all vineyard work and harvesting must be done by hand. This unique microclimate, combined with slate and granite soils, yields highly concentrated yet remarkably fresh wines.
While the region produces excellent white wine (mostly from the crisp, apple-scented Godello grape), the undisputed star here is Mencía:
Ribeira Sacra DO wines are extremely food-friendly. Their bright acidity and minerality pair beautifully with grilled pork, poultry, rich meat stews, and traditional Spanish wine snacks like chorizo and empanadas. For the white Godello wines, octopus, fish, and creamy cheeses are an absolute match.
Most local winemakers avoid extensive aging in new oak barrels in order to preserve the crisp fruitiness of the Mencía grape and the minerality provided by the terroir. If oak is used, it is typically older, larger vessels that do not mask the wine's intrinsic character.
The majority of young (Joven) Ribeira Sacra wines are best enjoyed within the first 1–3 years. However, premium bottles from old vines produced by top estates can evolve beautifully in the bottle for 5 to 8 years.
