The Fujian province in southeastern China is famous for its 'Silver Needle' white tea. The tea was named for its unique needle-like appearance – the buds are covered with fine white hairs that create a pale greenish-silver hue. The tea is harvested in early spring (March–April) and picked over just a few days, when the bud has not yet opened but has already accumulated all the components needed for the structure of the leaves. The harvest is dried outdoors – in a natural environment. This is the highest grade of white tea.
In the first year, the tea has gentle aromas of fruit and flowers. In the second year, subtle herbaceous tones emerge.
Preparation: pour 75 °C water over 5 g of tea; once the leaves have unfurled, wait another 2 minutes and then enjoy. You can steep it several times, with each infusion revealing a different flavour.
Store in a dark, dry place.
