A partially fermented, smoked black tea from single tea trees in the Phoenix Mountains. An intense aroma of flowers, papaya and smoke. The tea was named after duck excrement to deter neighbours from wanting to plant these excellent tea trees.
'Dan Cong' – a single tea tree of the 'Shui Xian' variety. There are only about 3,000 of these tea trees in the Phoenix Mountains. The authorities do not allow the cultivated area to be expanded. The oldest tea tree in that region is about 900 years old. The tea is plucked, withered, shaken in bamboo baskets, fermented, twice baked and hand-rolled.
Preparation: pour 75 °C water over 3 g of tea; once the leaves have unfurled, wait another 2 minutes and then enjoy. You can steep it several times, with each infusion revealing a different flavour.
Brewing temperature – 100 °C.
Store in a dark, dry place.
