Comté is one of France’s most renowned mountain cheeses and the country’s first cheese to receive AOP protected designation of origin status. It is produced in traditional “fruitière” dairies in the Doubs department using cow’s milk, then matured in cellars for at least four months according to long-standing regional traditions. This aging process allows the cheese to develop a subtle yet complex aromatic profile and its characteristic depth of flavor.
The texture of this Comté is firm yet pleasantly smooth, while the aroma reveals notes of butter, toasted nuts, hay, and delicate hints of fruit. On the palate, it offers a gentle sweetness balanced by subtle savory nuances and a long, nutty finish. As it matures, the cheese gains additional depth while maintaining an elegant and harmonious character.
The personality of Comté is strongly shaped by the terroir of the Jura mountains – alpine meadows, diverse vegetation, and traditional production methods. For this reason, every aged Comté develops its own distinctive aromatic profile and natural complexity.
These small Comté pieces are perfect for an apéritif with friends, as part of a cheese platter, or to enrich salads. They also make an excellent snack on their own. This cheese pairs especially well with mineral-driven white wines made from ‘Chardonnay’ or ‘Savagnin’ grape varieties, as well as lighter-style sparkling wines or oxidative Jura white wines.
