Affiné au Chablis is a French soft cheese made from pasteurized cow’s milk, originating from Burgundy. It is matured for 3–4 weeks and regularly washed with Chablis wine during the ageing process. This washing gives the cheese a light golden hue, a more expressive aroma, and a distinctive character closely tied to the region. Its interior remains exceptionally creamy and smooth, becoming even softer and more melt-in-the-mouth as it matures.
On the palate, Affiné au Chablis reveals gentle milky notes, light butteriness, subtle fruitiness, and a delicate floral layer enhanced by the wine washing. As a washed-rind cheese, its aroma is more pronounced than that of white mould-ripened cheeses, yet it is often considered milder and less aggressive than the famous Burgundian Époisses, with which it is sometimes compared.
This is a typical Burgundian cheese, whose identity is closely linked to Chablis wine—not only in name, but also in its production method. Chablis appellation wine is used not as a superficial addition, but as an essential element shaping the cheese’s flavour, giving it a richer, more aromatic profile and an elegant expression.
For serving, we recommend taking it out of the refrigerator 30–60 minutes before tasting to allow its creaminess and aromas to fully develop. Affiné au Chablis pairs beautifully with fresh or rustic bread, boiled potatoes, or simple dishes. In terms of wine, the most natural pairing is ‘Chablis’ itself or another fresh, mineral, unoaked ‘Chardonnay’.
