Mascaró Reserve Brut Nature “Pure” Cava DO is a “Brut Nature” style cava, which deliberately avoids expedition liqueur (liqueur d’expédition), in order to maintain a maximally dry, “boney” profile and a clean expression of the terroir. The blend consists of ‘Parellada’ (80%) and ‘Macabeu’ (20%), alcohol – 12%.
The aromas first reveal white flowers, greenish apples and lemon peel, later revealing subtle hints of yeast (fresh, clean) and a very light buttery nuance, typical of longer maturation with sediment. The bubbles are small, elegantly rising.
In the mouth, the wine is tonic, with clear acidity and a neat structure. The aftertaste leaves a slightly nutty and “chalky” impression.
The idea of “Pure” is directly linked to the purity of the ‘Parellada’ – a variety that is particularly elegant in the higher areas of Penedès, where its natural acidity and lighter texture allow for a dry cava style.
This is a cava produced using the traditional method, in the “Reserva” category, aged for more than 24 months on its lees. Healthy bunches are used, and only the free-flowing juice is taken for the base wine – in order to make the base particularly clean and delicate, suitable for longer aging.
It is recommended to serve chilled to 6-8 degrees as an aperitif, with seafood, white fish, and fresh cheeses.
