Cava DO is Spain’s most renowned sparkling wine appellation, symbolizing quality, tradition, and masterful winemaking. Most Cava is produced in Catalonia, particularly around the Penedès region, though the appellation also includes other Spanish areas that share a similar climate and soil composition.
Cava wines are made using the traditional method (método tradicional) – the same process used for Champagne, where the second fermentation takes place in the bottle. This technique gives the wine its fine, long-lasting bubbles, delicate texture, and complex aromatic profile.
The main grape varieties are ‘Macabeo’, ‘Xarel·lo’, and ‘Parellada’, which together provide the perfect balance of fruit, structure, and freshness. In recent years, international varieties such as ‘Chardonnay’ and ‘Pinot Noir’ have been increasingly used, especially in premium cuvées.
