The aroma is intense yet refined – dominated by ripe black fruits: cherries, blackberries, plums, blueberries; floral notes: violets, roses; spicy hints: chocolate, black pepper, tobacco leaves. All of this is bound together by a subtle warmth of alcohol that elevates the aromas.
The palate is rich and round, with vibrant fruitiness and balanced sweetness. Texture: silky, dense, but not too heavy. Tannins: soft yet present – providing the backbone. Finish: long, leaving an impression of black berries, chocolate and light spice.
Harvest: by hand, from old mixed vineyards ("field blend"). Fermentation: carried out traditionally in stone "lagares" (open vessels). Halting fermentation: when the desired balance of sugar and alcohol is reached, fermentation is stopped by adding grape spirit (aguardente) – thus preserving the natural sweetness. Aging: approximately 2–3 years in large oak casks (balseiros) in the cellars of Vila Nova de Gaia.
This duration allows the wine to retain freshness, fruitiness and a youthful colour – characteristic of the Ruby style.
