This is an icon of Sicilian wine. Since 1985, this wine has amazed and won over the hearts of more and more wine lovers year after year. The Chardonnay grapes used to produce this wine are grown in two vineyards in the Menfi commune. The soil of the Ulmo vineyard is dominated by limestone and black earth with fine gravel. Meanwhile, at Maroccoli, the vines grow on calcareous soil rich in large stones.
After careful selection of the Chardonnay grapes, the juice is fermented in small oak barrels at a controlled temperature of 18°C. Following fermentation, the wine is aged for 11 months — 50% in new and 50% in used French oak barrels.
An intensely golden-coloured wine with aromas of ripe peaches, acacia honey and toasted almonds. Beautifully balanced, oily on the palate, with a long, mineral finish.
Serve at 12–14 °C with grilled salmon, pasta, richer cheese pizzas or porcini mushrooms fried in butter.
