Poli Taiadèa is a grappa-based liqueur typical of the Bassano del Grappa area, with a name and style deeply rooted in local tradition. In the Veneto dialect, “Taiadèa” (also known as “Tajadea”) comes from the word tajare (“to cut”), because this drink is created by “combining” grappa with an infusion of cinchona bark (Cinchona calisaya). Historically, cinchona also became known worldwide through the tradition of tonic water, so Taiadèa is often described as a Venetian response to the culture of bittersweet, spiced aperitifs.
Production follows a natural infusion approach: cinchona bark and spices are macerated in alcohol and grappa, while the distillate is made in copper stills with steam boilers to keep the aromas clean and precise. For decades, the Poli family has preserved the authentic Venetian name and the balance of its family recipe, complemented by orange peel and cloves.
The colour is dark with a reddish hue. The aroma is bittersweet and spicy, recalling dried fruits, candied fruit notes, and prunes. On the palate, Taiadèa shows what defines this style: pleasant sweetness alongside a clear yet elegant bitterness, with a long, warming finish.
Serve at 10–15 °C in a tulip-shaped glass—either as a digestif or mixed with tonic.

It all began in 1898, when straw hat maker GioBatta Poli, driven by a passion for grappa, built a small still and began visiting local winemakers to distill the leftover grape pomace after winemaking.
