White dry
Protos Verdejo Cuvée Rueda DO 2024 is a dry white wine from Rueda, made from 100% ‘Verdejo’ grapes. The wine is made from organically grown young vines growing in the sandy soils of Pago de los Rosales, at an altitude of 730-800 m. This is important for the style: these soils ripen the berries faster and help keep the wine fresh, fruity, but not heavy.
In aroma, the wine shows not only the usual ‘Verdejo’ freshness, but also a somewhat broader, more mature profile: notes of citrus, green apples, herbs, peaches, tropical fruits, white flowers and minerality. As a result, the aroma does not seem just sharp green, but more layered and gently rounded.
The wine is balanced, has more volume than a simple young Rueda ‘Verdejo’. This is provided by the aging with yeast: the wine remains fresh, but in the mouth it feels rounder, more textured, and at the end a subtle hint of bitterness characteristic of the variety appears.
The harvest is harvested at night, fermentation is carried out at a controlled temperature of about 14 °C, and then the wine is aged with yeast for at least 5 months, combining stainless steel tanks, 3500 l French oak barrels and concrete eggs. It is this combination that explains why the wine has more texture and a light mineral tone.
Residual sugar content: 1.3g/l.
Serve at 8-10 °C with seafood, white fish dishes, stewed chicken, and white meat appetizers.
