Langres Tradition AOP is one of the most distinctive cheeses of France’s Champagne region, crafted from cow’s milk and matured according to long-standing local traditions. This soft washed-rind cheese is known not only for its rich flavour but also for its unique shape – a small depression, often referred to as a “basin”, forms in the centre of the cheese. This characteristic develops naturally because the cheese is not turned during maturation, allowing its structure and texture to evolve in a distinctive way.
During ripening, the cheese develops an orange-yellow washed rind that encloses a soft, supple and creamy interior. The aroma reveals notes of matured milk, butter, cream and subtle cellar nuances, while the palate is rich, expressive and persistent. Despite its pronounced aroma, Langres maintains an excellent balance between creaminess, gentle salinity and pleasant savoury complexity.
Langres Tradition AOP is best served at room temperature as part of a cheese board. It pairs beautifully with rustic bread, dried fruits and nuts. Champagne wines from the region, mineral-driven white wines made from ‘Chardonnay’, or lighter red wines from ‘Pinot Noir’ complement its rich and creamy character particularly well.
