A blue-mould cheese made from fresh sheep's milk, from Aveyron, France. Crumbly and moist, Roquefort has a distinctive, unmistakable flavour: mild and buttery-sweet at first, though the mould is quite sharp. Currently, only 7 producers are permitted to make this cheese.
It pairs beautifully with sweet wines from Sauternes (France, Bordeaux), Porto (Portugal) or wines made from 'Muscat' grapes.
Ingredients: unpasteurised sheep's milk, salt, lactic cultures, rennet, Roquefort mould (penicillium roqueforti).
Contains traces of milk and milk products.
