White dry
The Riesling is planted on the lower part of the small Heimbourg single vineyard. The top soil is a siliceous calcareous marl, but quickly the roots reach the Oligocen mother rock that contains a high proportion of limestone making it tough for the vines.Pale gold colour. The nose shows a delicate combination of citrus fruit aromas and dry herbs. The palate shows a bright intensity, a vivacious and sapid acidity and fine texture. It feels in harmony and the finish is delicate and inviting yet dry and racy.The fermentation was actually relatively easy for this wine, the wild yeasts left no residual sugars in this vintage.
Serve at 8-10 °C with white fish dishes, seafood, sushi.
There’s a lot of discussion about “noble austerity“ in wine, but those wines are often just a bit hard. This has a certain mineral austerity, but it is welded to the ripest of citrus aromas and breathtaking vibrancy. Although this already makes an impressive statement, the core is so tightly packed that it will show even better after some time to unwind. From biodynamically grown grapes.
