Red dry
The wine "JO" takes its name as a dedication to the Ionian Sea, on whose coast vines more than 40 years old grow. The soil is terra rossa — a mixture of clay, sand, and limestone — and the vines grow practically on flat ground, at only 15 metres above sea level.
After a brief drying of the berries on the vine, they are hand-harvested, carefully selected, gently crushed, and kept for 3-4 weeks at 23-25 °C in stainless steel tanks with the skins. After settling and removing the coarser lees, the wine is aged for 12 months in French oak barrels (50% new, 50% second-use) and 6 months in bottle, unfined and unfiltered.
A ruby-coloured wine, with aromas of ripe black cherries, dried plums, cocoa, tobacco, and Mediterranean herbs. Soft, warm, and refreshing.
Serve at 18–20 °C with slow-roasted lamb and potatoes, pepperonata stew (onions, garlic, peppers, olives, tomatoes, basil and parsley), or grilled tuna steaks.
Aromas of cola, leather, fruit salad and salted chocolate, but on the palate the smooth texture and medium body are sustained by refreshing, almost crisp acidity. Drink now.

Today the vineyards of Gianfranco Fino, located in the countryside of Manduria and Sava, small plots are fragmented, with red earth and rocks occasionally protruding. Crops are generally made from very old trees, flanked by recently planted an experimental vineyard.
