 Planeta Dorilli Cerasuolo di Vittoria Classico BIO 2023 - an elegant wine combining softness and structure, representing the Sicilian profile: a balance of rich fruitiness and spicy tones, a sense of natural but refined tannin structure; an earthy yet modern interpretation that reflects both terroir and organic farming. Harvested by hand, fermentation in stainless steel tanks, after malolactic fermentation the wine was aged for 12 months in 36hl oak tanks. The main characteristic of the soil of the Cerasuolo di Vittoria area is its sandy texture; the soil is mainly composed of loose red sand, at a depth of about 90 cm there is a layer of tuff, very important for soil water retention and therefore for the water balance of the plants. The aromas are ripe black cherries, cardamom, vanilla and cinnamon. Ripe, soft and round tannins melt in the mouth due to the incredible softness of the fruit. Oriental spices blend with complex flavors of smoked pancetta, marjoram and prickly pear. A long finish with some dried herbs and a light smoky note gives the wine a sense of elegance and finish.

Serving recommendations

Serve at a temperature of 16-18 °C with tuna, mushroom dishes, or traditional Italian dishes (e.g. pizza with cured ham).
