White dry
Sigalas Santorini Assyrtiko 2025 is an expressive dry white wine from the Greek island of Santorini.
The aroma reveals notes of lemon and peach, accompanied by subtle floral and mineral nuances. The wine is full-bodied yet refreshing; vibrant acidity, a perceptible salinity, and a long, citrusy finish lend it energy and a clear structure.
Carefully selected grapes are gently pressed as whole bunches. Fermentation takes place in temperature-controlled stainless steel tanks. The wine is then aged on its fine lees for at least three months, with periodic stirring (*bâtonnage*), which adds roundness and complexity to the texture.
Serve at 10–12 °C. Recommended pairings include oysters, fried fish, or grilled shrimp or octopus seasoned with lemon and olive oil.
The Domaine Sigalas 2025 Santorini Assyrtiko offers a youthful and approachable expression of the variety with aromas of chamomile, confit lemon, quince and Mediterranean herbs, including sage. Compared to the estate's more ambitious bottlings, this wine is simpler and more immediate, emphasizing texture and drinkability over mineral complexity. The palate is rich, slightly oily and pleasantly textured, with enough acidity to maintain sharpness. Produced in 45,000 bottles from vines more than 60 years old rooted in the volcanic soils of Oia, where pumice, lava and pyroclastic materials shape the vineyard landscape, the wine ages on its lees for at least four months. First released in 1991, this is one of the earliest 100% Assyrtiko wines from Santorini, and it remains an important benchmark.
Nestled in the picturesque Oia plain, on the northern part of Santorini, lies the "Domaine Sigalas" winery. The family-owned 40 hectares of vineyards are cultivated sustainably, with an annual production of 200,000 bottles, reflecting the essence of Santorini and the Cyclades islands. "Domaine Sigalas" is the pride of Greek wine, earning international acclaim.
Paris Sigalas, a visionary winemaker, brought innovation to Santorini's wine production, combining tradition with modern methods. The 1991 creation of "Santorini Assyrtiko" - the first wine with a Protected Designation of Origin - marked a new chapter in the winery's history. "Domaine Sigalas" continuously experiments, striving to extract the best from the Santorini terroir.
