Sigalas Santorini Kavalieros 2023 is a rich, complex dry white wine from the Santorini PDO appellation in Greece. It is crafted from 100% 'Assyrtiko' grapes, sourced from a single small vineyard in the village of Imeroviglio, where the vines are over 60 years old.
The wine’s aroma reveals notes of lemon and stone fruit, accompanied by hints of toasted bread and dough. On the palate, it is rich and oily with a creamy texture and an exceptionally long finish.
The grapes are hand-harvested, carefully selected, and gently pressed as whole bunches. Fermentation takes place in temperature-controlled stainless steel tanks. The wine is then aged for 18 months on its lees, with the lees stirred regularly during the initial months. This extended aging imparts roundness to the texture and adds aromatic complexity.
Residual sugar content – 1.7 g/l.
Serve at 11–13°C. Recommended pairings include grilled fish, lobster, scallops in butter sauce, or a creamy seafood risotto.
