Crémant De Limoux AOC

One of the oldest sparkling-wine appellations in Europe, located in southern France, on the elevated terraces between the Languedoc highlands and the foothills of the Pyrenees. This is a region where centuries-old sparkling-wine traditions intertwine with a cooling mountain climate and a complex limestone–clay terroir. It is here, as early as the 16th century, that some of the earliest records of naturally sparkling wine were documented—crafted by local Benedictine monks, who considered this style an essential part of Limoux’s identity.

The terroir of Crémant de Limoux is shaped by striking contrasts. Higher altitudes (250–450 m) create a cooler microclimate than in most of Languedoc, allowing grapes to retain natural acidity and aromatic purity—qualities rarely found in southern France. A mosaic of limestone, clay and gravel soils adds structure, subtle salinity, and minerality, while Atlantic air currents moderate temperatures and ensure a slow, balanced ripening.

The appellation is dominated by ‘Chardonnay’, ‘Chenin Blanc’, and ‘Mauzac’, with each variety contributing distinct character.

Crémant de Limoux is produced exclusively by the traditional method, with secondary fermentation occurring in the bottle. Ageing on the lees lasts a minimum of 12 months—though top producers often extend this to 15–24 months—resulting in wines where crisp citrus and green-apple notes blend with hints of brioche, almond, and a fine creamy texture.

On the palate, Crémant de Limoux balances Languedoc’s sunny warmth with mountain freshness: precise, mineral, gently sparkling, and long on the finish. It remains one of southern France’s most elegant sparkling-wine traditions, offering both quality and authenticity—often rivalling northern appellations while keeping its distinctive, warmly refreshing character.
