One of Burgundy’s hidden gems, Saint-Aubin Premier Cru lies between the prestigious villages of Puligny-Montrachet and Chassagne-Montrachet, in the southern part of the Côte de Beaune. This appellation is celebrated for its refined ‘Chardonnay’ and authentic terroir character that combine elegance, freshness, and a finely chiseled mineral structure.
The winemaking tradition in Saint-Aubin dates back to the Middle Ages, when monastic vineyards supplied wines to the Dukes of Burgundy. The appellation was officially granted status in 1937, and today it boasts 30 Premier Cru vineyards, most of them located on the slopes surrounding the village of Saint-Aubin.
The climate is continental, with cool mornings and sunny days. Vineyards are planted at 300–400 meters above sea level on slopes facing southeast and south, which ensures ideal sunlight exposure while preserving natural acidity.
The soils are composed of clay and limestone marl, rich in small stones that lend the wines minerality, structure, and aging potential. This terroir is especially suited to ‘Chardonnay’, allowing it to express delicate aromatic nuances.
Many Saint-Aubin 1er Cru wines are aged for 10–12 months in oak barrels, often with only a small proportion of new oak to preserve freshness and minerality.
