Sparkling dry
A wine without added sulfites; before alcoholic fermentation has fully completed, the wine is bottled and sealed with a permanent cork. The result of fermentation finishing in the bottle is a lightly sparkling wine. Fresh and aromatic, the wine offers aromas of bitter orange peel and tropical fruits. The Mediterranean climate and cool summer nights allow the grapes to ripen optimally, lending the wine its subtlety. Slopes of rounded stones and red clay bring freshness to the wine. The harvest is hand-picked. Maceration — 4 days. The grape juice is fermented in stainless steel tanks.
Serve at 8–10 °C with fresh goat cheese, Caesar salad, scallops or sushi.
Ženia Vasiljeva's journey from Lithuanian pharmacy to the Languedoc wine world began in 2013, when she met her husband, Frenchman Thibauld Vermillard. After two years of experimentation and learning, they took over a 10-hectare family vineyard and expanded it to 12 hectares. Today, "Domaine Ampelhus" is a successful winery that has won the Best Young Winemaker in France award. Ženia and Thibauld, following traditional winemaking methods and biodynamic principles, create exceptional wines that reflect the uniqueness of the Languedoc terroir. They grow various grape varieties, including 'Muscat', 'Grenache', 'Piquepoul Noir', 'Terret Noir', and 'Rivairenc', and some wines are made by experimenting with unusual methods.
