This Domaine Servin Chablis wine is crafted for wine enthusiasts who wish to savor a concentrated and fruity taste along with the expressive freshness derived from old ‘Chardonnay’ vines.
The wine features bright aromas of apple, stone fruit, and ripe tropical fruits. On the palate, a complex stone fruit flavor is beautifully complemented by an exceptionally well-balanced sensation of acidity. This is followed by a long, mineral finish.
The ‘Chardonnay’ grapes for this wine are hand-picked from the 1.92-hectare Les Pargues vineyard. Only the yield from old, non-cloned vines is used. Sixty years ago, Domaine Servin replanted this historic vineyard using the massale selection method (propagating the best old vines). These mature vines yield little, but offer intensely concentrated fruit. The vineyard is dominated by limestone and clay soils with a distinct influence of Kimmeridgian limestone.
Serve at 10-12 °C with salmon salad, oily fish dishes or as an aperitif.

He has not only replanted vines with a significantly higher density than is common in the region but has also achieved exceptional grape concentration. In the best plots owned by Domaine Servin, grapes are harvested only by hand, emphasizing precision and attention to detail. François strives to blend traditional and modern winemaking methods, utilizing stainless steel fermentation tanks, yet a portion of his wines carries a subtle "touch" of oak, while almost all Grand Cru wines are fermented in oak barrels.
