Ossau Iraty is a traditional sheep’s milk cheese from Southwest France, originating from the Basque Country and Béarn regions, and holding a Protected Designation of Origin (PDO / AOP) status. It is produced following long-standing artisanal traditions, using milk from local sheep and slow maturation to reveal the true character of its region.

The cheese is aged for 4 months, during which it develops a firm, natural rind and a smooth, elastic texture. Its aroma reveals subtle notes of nuts, hay, and milk, while the palate is gentle yet expressive, with a slight sweetness and a pleasant, long-lasting finish.

Ossau Iraty is considered one of the most important sheep’s milk cheeses in France, reflecting the diversity of mountainous pastures and traditional cheesemaking. Its flavor may vary slightly depending on the season – summer milk brings more aromatic intensity, while spring milk offers greater freshness and softness.

This cheese is perfect both for everyday enjoyment and cheese boards. It is recommended to serve at room temperature to fully раскрыveal its aromatic profile. It pairs well with fresh bread, dried fruits, or nuts, and also complements fresh, mineral-driven white wines or lighter red wines that highlight its nutty character.

Ingredients: pasteurized sheep’s milk, salt, rennet, cultures.

Nutritional value (per 100 g): 1865 kJ / 450 kcal, fat 38 g, of which saturated fat 28 g, carbohydrates 2 g, of which sugars <0.5 g, protein 25 g, salt 1.7 g.

Store at 4–8 °C.
