Parellada is a delicate and elegant white grape variety originating from Catalonia (Spain), where it has long been used in the production of high-quality Cava sparkling wines. Together with other local varieties – Macabeo and Xarel·lo – Parellada forms the classic foundation of Spanish sparkling wine. This grape is highly valued for its freshness, subtle aromatic profile, and ability to bring elegance and balance to the wine.
Parellada is most often recognized in pale straw-colored wines that display delicate aromas of green apples, citrus fruits, white flowers, and gentle herbal notes. On the palate, it is light, fresh, and marked by well-balanced acidity. Thanks to its neutrality and purity, this grape is ideally suited as a base for sparkling wines – providing them with structure, freshness, and a lingering, refined finish. Occasionally, it is also used to produce still white wines, where clean, citrus-driven flavors dominate.
