"Didacus" is the most prestigious jewel of the Planeta family and a tribute to the estate's visionary, Diego Planeta, representing the absolute pinnacle of Sicilian winemaking excellence. This wine is the estate's most luxurious expression, created to immortalize the founder's legacy.
Displaying an intense, deep straw-yellow color, the wine features an incredibly complex aromatic range: from citrus zest and white flowers to toasted hazelnuts, vanilla, and a subtle maritime minerality. On the palate, the wine surprises with its structure and creaminess, followed by an exceptionally long, saline, and elegant fruit finish.
This wine originates from the oldest 'Chardonnay' vines, planted in 1985 in the Ulmo plot near Lake Arancio. The soil here is characterized by a unique blend of limestone and clay, ensuring the wine's elegance and aging potential.
Following an extremely rigorous selection process, the grapes are fermented in 225-liter French oak barrels. Subsequently, the wine is aged for 10 months in the finest barrels (80% new), maintaining maximum concentration and complexity.
Recommended serving temperature: 12–14 °C. Pair with fatty fish (salmon or trout) with cream sauce, French-style roasted poultry, or aged hard cheeses.
