Munster Géromé AOP is a French soft cheese made from unpasteurised cow’s milk, with a washed orange rind. This rind gives the cheese its distinctive, intense aroma, while the interior remains creamy and, as it matures, melts more and more on the palate.
In terms of flavour, Munster Géromé is usually not “sharp right away”: when younger, it can be gently milky and buttery, with a light saltiness, but with ageing it develops more pronounced earthy, slightly animal notes and a longer, more intense finish. The more mature the cheese, the softer the texture and the more expressive the aroma. This cheese has been aged for 2–3 weeks (depending on its size).
The name “Munster” is linked to the Latin word monasterium (monastery): the cheese’s history is associated with the establishment of monasteries on the fringes of the Vosges region and the cheesemaking tradition brought by monks.
For serving, we recommend taking it out of the fridge 30–60 minutes before tasting, so the aroma and creaminess can fully open up. Munster Géromé pairs well with rustic bread, boiled potatoes, pickled gherkins or onions. Dry, aromatic ‘Riesling’ or ‘Gewürztraminer’ wines, especially from Alsace (the region Munster comes from), pair particularly naturally with this cheese and help balance the rind’s intense character.
