One can expect a crystal-clear yellow with light green reflections. The aroma is fresh and powerful, bursting with vibrant notes of orchard fruits and white peach. The palate is crisp and refreshing, featuring lively citrus notes that lead to a bright, clean finish.
The vineyards are situated on the foothills of the Pyrenees, benefiting from clay and limestone soils that impart exceptional minerality. These high-altitude ‘Chardonnay’ grapes achieve remarkable purity and concentration.
The winemaking process focuses on preserving the fruit's essence: grapes undergo slow, gentle pressing to extract only the brightest juices. Low-temperature fermentation safeguards delicate aromas, while aging on fine lees over winter builds complexity. Crucially, this wine is made without oak, allowing its vibrant fruit character to shine.
Serve at 10-12 °C with hard cheeses, grilled vegetables or salmon steak with lemon.
