The 2007 release from Diebolt-Vallois is a standout expression of pure Chardonnay, originating from venerable vines rooted in the revered Grand Cru terroir of Cramant. This vintage Champagne is a striking interpretation of Blanc de Blancs, matured with precision and crafted to reflect its origin’s mineral-rich character.
From the first pour, the wine enchants with lifted aromas of orchard fruits—ripe pear and crisp apple—layered subtly with hints of toasted brioche and a gentle smokiness. Beneath this aromatic complexity lies a refined chalk-driven minerality, a quiet but powerful signature of its provenance.
On the palate, it shows a confident structure: lively yet graceful, with a vibrant acidity that carries through layers of fruit and savory depth. The mousse is fine and persistent, adding texture without overshadowing the wine’s clarity. The finish is long and composed, offering both energy and elegance.
As with other top-tier releases from the estate, this cuvée underwent primary fermentation in oak barrels but deliberately skipped malolactic conversion, preserving its linearity and freshness. Unfined and unfiltered, it stands as a pure, unadulterated expression of place and time. A minimal dosage complements its natural balance and purity.

The majority of the family's 11 hectares of vineyards boast Grand Cru and Premier Cru status. The ‘Chardonnay’ grape, unofficially titled the queen of the Côte des Blancs, reigns supreme in these prestigious lands. Until 1992, this relatively unknown producer suddenly found itself in the spotlight of wine enthusiasts when “Gault Millau,” one of France's most influential restaurant and wine guides, nominated Diebolt-Vallois as Champagne Producer of the Year. Despite this sudden recognition and attention, Diebolt-Vallois has remained a family-run winery, driven by exceptionally warm and friendly people.
