Champagne Domaine Vincey Endogène Tirage au Mout Oger Grand Cru 2021 – an exceptional, limited-edition Blanc de Blancs that captures the very essence of Oger Grand Cru – purity, tension, and subtle chalky minerality. This Champagne represents the pinnacle of Florence and Quentin Vincey’s craftsmanship, embodying their uncompromising pursuit of authenticity, where the terroir speaks for itself.
The name “Endogène” – meaning “born from within” – perfectly defines this cuvée. Crafted without added sugar, it is made using the rare “Tirage au Mout” method, in which the second fermentation in bottle is initiated not with a sugar solution but with the fresh grape must (mout) itself. This singular approach gives the wine a finer mousse, greater natural harmony, and unmatched authenticity.
In the glass, Endogène glows a pale golden hue with delicate green reflections. The bouquet is refined and multilayered – lemon zest, white grapefruit, green almonds, white blossoms, and wet stone, unfolding gradually into subtle notes of brioche, smoke, and sea salt.
On the palate, the Champagne is taut and precise yet delicately creamy. Its bright, balanced acidity merges with a saline, chalk-inflected texture, while the finish is long, vertical, and saline, filled with light, freshness, and limestone brightness.
The ‘Chardonnay’ grapes come from the slopes of Oger Grand Cru, where the chalk and limestone soils impart the wine’s precise structure and maritime elegance. Fermentation takes place with native yeasts, partly in oak barrels and partly in stainless steel, followed by aging on fine lees for 4–5 years, developing depth, texture, and a refined touch of brioche.
Best served at a temperature of 8–10 °C. Pairs well with fresh oysters, lemon sea urchin tartare, or white fish with beurre blanc sauce.
Champagne Domaine Vincey is a grower Champagne estate located in the village of Oger Grand Cru, in the prestigious Côte des Blancs region. Here, Chardonnay vines grow on limestone-rich soils, cultivated using biodynamic principles and a minimal-intervention approach in the vineyards.
The Vincey family’s winemaking tradition dates back to the early 20th century. The estate took on its modern identity in 2014, when Florence and Quentin Vincey assumed leadership and began a focused transition toward organic and biodynamic viticulture.
The younger generation of the Vincey family is committed to expressing authentic terroir character. Each parcel is vinified separately, wild yeasts are used, wines are unfiltered, and no chemical treatments are applied in the vineyards.
