An elegant and generous Merlot from Domaine des Tours – a wine where the fruitiness of the Mediterranean climate harmoniously meets the expressive structure of the Vaucluse terroir.
The bouquet reveals notes of black fruits and ripe berries, delicately enhanced by hints of herbs and spices. On the palate, it is rich and harmonious, with elegant acidity, supple tannins, and a long, savory finish. This is a rounded, structured, and firm red wine, distinguished by its soft tannins, expressive fruit and spice aromas, and an exceptional balance.
The Merlot vines grow in soils of limestone, sandstone, marl, and stones, under the warm Mediterranean climate. The harvest is carried out only at full ripeness, and the winemaking process is carefully supervised to preserve the true essence of the terroir. Maceration lasts 12–15 days, followed by aging in oak barrels (around 30% new oak).
Serve at 16-18°C with lamb, stuffed wild mushrooms, red meat stews with wild mushrooms.
Château des Tours is an integral part of the cult Château Rayas legacy, located in the commune of Sarrians. Although this estate formally operates under more modest appellations, under the stewardship of Emmanuel Reynaud, it has achieved quality heights that often surpass the most famous names of Châteauneuf-du-Pape. It is a place where time stands still: modern technology is eschewed in favor of vineyard health and a level of patience that allows the wines to reach their peak expression only after many years of cellar aging.
The estate's vineyards stretch across the Sarrians plains, dominated by sandy and clay soils strewn with alluvial deposits. In contrast to the stony terrains of neighboring appellations, the prevailing sand here imparts an incredible elegance, silky texture, and the ethereal expression characteristic of the Rayas family. The climate is defined by Mediterranean influences, yet the surrounding biodiversity—olive trees, grain crops, and woodlands—creates a unique microclimate that protects the grapes from excessive heat stress. This allows the Grenache berries to accumulate phenolic maturity while retaining essential freshness.
Winemaking at Château des Tours is a blend of deep tradition and intuition. Emmanuel Reynaud employs traditional vinification: the harvest is picked very late to ensure full physiological ripeness, and fermentation occurs using only indigenous yeasts. The wine is aged in old, large-capacity neutral oak casks, which impart no oak flavor but allow the wine to "breathe" and develop complex tertiary aromas. Crucially, the wines are only released to the market when the winemaker deems them ready, often 5 to 7 years after the harvest.
