Description

Selles-sur-Cher PDO is an exceptional goat's milk cheese. This cheese is made exclusively from raw, whole milk from Alpine and Saanen goats. To ensure the highest quality, the animals are fed a natural diet of maize and alfalfa hay, strictly without silage and GMOs. During the production process, the raw whole milk from the morning and evening milkings is combined daily. After a slow lactic coagulation, the curd is ladled by hand into perforated moulds to drain for 24 hours.

Once removed from the moulds, the cheeses are hand-rubbed with a mixture of salt and ash on special racks, creating a unique protective layer. This special maturation process allows the cheese to reveal its distinct character.

Beneath the ashy rind lies an exceptionally creamy and soft texture. On the palate, this cheese stands out for its freshness and delicacy, harmoniously complemented and finished by expressive notes of hazelnut. The rind imparts a slight earthiness to the cheese, enriching the overall flavor profile with depth.

This cheese is delightful to enjoy on its own or served as part of an elegant cheese board, and it pairs perfectly with fresh, crusty bread. It is especially well-suited to crisp, mineral white wines—a classic choice would be Sauvignon Blanc from the Loire Valley, whose freshness ideally balances the creaminess of the cheese and highlights its nutty undertones.

Ingredients: Raw goat's milk, salt, rennet, lactic acid bacteria, color: vegetable carbon.
