A fresh, youthful and fruity wine made from the youngest harvest of Nebbiolo vines. A wine with a light style that will suit those who like balanced and dynamic wines.
The wine is made from Nebbiolo grapes, the juice of which was fermented in stainless steel tanks. After fermentation, malolactic fermentation took place, giving the wine a softer and more balanced taste. The wine was briefly aged in steel tanks to maintain its freshness and fruitiness.
The wine has an intense cherry ruby color, which reflects its freshness and vitality. The aromas open up a delicate bouquet of rose petals, cherries, forest berries and dried strawberries. These aromas are enriched by notes of blood orange, mint and sweet spices, which give the wine additional depth and complexity.
In the mouth, the wine has fresh cherry and raspberry flavors that blend perfectly with fruity and fresh tannins that give the wine a pleasant structure. It is a wine whose lightness and freshness stand out, but it remains complex and deep with every sip.
Serve at 16-18°C with:
Herb Roast Beef: A roast beef prepared with rosemary, thyme and garlic will allow the wine to reveal its tannins and freshness.
Spiced Roast Chicken: A roast chicken seasoned with rosemary, balsamic vinegar and coloured peppers.
Barbecue: A meat kebab or barbecue dish with tender marinated meat (e.g. beef or pork) seasoned with spices such as cumin, paprika or thyme.
Meat Lasagna: A traditional lasagna that combines ground beef, tomato sauce and cheese will complement the fruity and floral notes of the wine.
Wild Mushroom Risotto: A wild mushroom risotto with parmesan will allow the wine to reveal its subtle spicy and fruity notes.
Pasta with tomato sauce: Classic pasta with tomato sauce and a splash of red wine is a simple but delicious choice that pairs perfectly with the freshness of the wine.
The Vajra family has farmed Bricco delle Viole, the highest cru in Comune di Barolo, since the 1880s. At the young age of fifteen, Aldo Vajra embraced the dream to revive his family legacy.
