Description

A classic Village appellation white Burgundy wine reflecting the mastery of the estate's current winemaker, Olivier Lamy (who took over the estate from its founder, Hubert).

The aromatic palette is dominated by notes of white peach and lemon zest, complemented by stony minerality, subtle brioche, and light nutty nuances. On the palate, the wine reveals a medium body, firmly supported by the producer's characteristic vibrant acidity and a creamy, polished texture. The taste blends the freshness of citrus fruits, transitioning into a long, elegant, and salty finish.

The wine is made from 'Chardonnay' grapes grown in the separate "Le Concis du Champ" plot. Although this vineyard is situated in the lower part of the appellation, where deeper limestone and clay soils prevail, the high-density planting practice applied by O. Lamy and the sustainable, ecologically based vineyard management allow for the extraction of maximum flavor concentration while maintaining a clean aromatic profile and a subtle reflection of the terroir.

In accordance with the estate's philosophy, only natural wild yeasts are used for fermentation. The wine is aged in larger capacity (300 and 600 liters) French oak barrels (demi-muids), using just 0–10% new oak.

Serving recommendations

Serve chilled to a temperature of 10–12 °C. This wine pairs perfectly with seafood (especially scallops), white fish sautéed in butter, poultry with creamy sauces, and soft cow’s milk cheeses.

About brand

Hubert Lamy is a young yet already highly regarded Burgundy winemaker based in Saint-Aubin, near Chassagne-Montrachet. Although his first wines appeared only recently, they immediately attracted the attention of sommeliers and collectors thanks to their precision, clarity of style, and sensitive expression of terroir. After studying in Beaune and gaining experience at several prestigious estates, Hubert chose to pursue his own vision. His wines convey the essence of Saint-Aubin and Chassagne, combining classical Burgundian aesthetics with a modern approach to winemaking.

Winemaking Philosophy

The vineyards are farmed using organic and biodynamic practices, without herbicides or synthetic fertilizers. The winemaker’s goal is not to shape the wine, but to allow it to express itself naturally.

Fermentation is carried out with indigenous yeasts, and oak is used very sparingly (around 15–25% new barrels). Aging typically lasts 12–18 months, allowing the wines to evolve naturally without additional filtration.

Wine Style

The Chardonnay wines are characterized by clear minerality, a delicate creamy texture, floral and citrus aromas, and finely integrated oak.

The Pinot Noir wines show an elegant aromatic profile with notes of red berries, subtle herbal nuances, and refined tannins. These wines have excellent aging potential while remaining approachable in their youth.

Hubert Lamy wines are known for their harmonious balance between accessibility and longevity. They are enjoyable when young but gain complexity and depth over 5–10 years. The Premier Cru wines, particularly En Remilly and Les Chaumées, display outstanding aging potential while maintaining vibrant acidity and the refined, classic character of Burgundy.
