Brebis d’Or is a soft, thermised sheep’s milk cheese from the Fribourg canton of Switzerland, distinguished by its creamy texture and the strip of spruce bark wrapped around it during maturation. After being removed from the brine, the cheese is encircled with spruce bark and then aged for around 10 days in a cool, temperature-controlled cellar, where it develops a fine white mould rind.
The spruce bark lends the cheese subtle woody and forest-like aromas that beautifully complement the delicate flavour of the sheep’s milk. When young, Brebis d’Or has a soft texture, becoming increasingly creamy as it ripens. Once the surface begins to turn yellow, the interior can become exceptionally soft and almost runny.
Brebis d’Or is best enjoyed at room temperature with rustic bread. It can also be baked in the oven with the spruce bark still attached for around 20 minutes at 160 °C and served warm with baked or boiled potatoes.
It pairs particularly well with fresh, mineral white wines such as ‘Chasselas’ or ‘Chardonnay’, as well as lighter, elegant sparkling wines.
