Champagne Domaine Vincey Interlude n°4 Tirage au Mout Chouilly Grand Cru – an exceptional, limited-edition Blanc de Blancs, born from the Chouilly Grand Cru village – one of the most celebrated sites in the Côte des Blancs, where ‘Chardonnay’ reaches unmatched refinement, depth, and subtle maritime minerality. More than just Champagne, this is both an experiment and a work of art — an expression of Florence and Quentin Vincey’s vision to reveal terroir through a natural, uncompromising approach to winemaking.
“Tirage au Mout” is an exceptionally rare technique in which the second fermentation in bottle (the creation of mousse) begins with grape must rather than added sugar. This method gives the Champagne a more natural balance, a finer bead, and an unmistakably pure texture. No additional sugar, minimal sulfites — only grapes, native yeasts, and time.
In the glass, the Champagne shimmers pale gold with subtle green reflections. The bouquet unfolds with lemon zest, white peach, green almond, and sea salt notes, followed by delicate hints of fresh bread, brioche, and a distinct chalky minerality.
On the palate, it is precise and crystalline, structured by vibrant acidity and a saline-chalky tension. The flavor moves gracefully between citrus brightness and silky creaminess, finishing long, vertical, and mineral, leaving a lingering touch of salt and freshness.
Chouilly Grand Cru is among the most renowned Côte des Blancs villages, its chalk and limestone soils lending depth and verticality to the Chardonnay. The vines face south, basking in sunlight that ensures ripeness, while cool nights preserve freshness and precision.
Every Domaine Vincey cuvée expresses its parcel’s unique character. “Interlude n°4” was aged on fine lees to gain texture, subtle brioche tones, and creamy balance. The dosage is Brut Nature, preserving the wine’s unfiltered purity and crystalline expression of terroir.
Serve at 8–10 °C. Pairs well with oyster salad, lemon tuna tartare, or butter-fried flounder with cauliflower purée.
Champagne Domaine Vincey – a new voice in Champagne, located in the Grand Cru village of Oger, at the heart of the prestigious Côte des Blancs. This area is celebrated for its pure ‘Chardonnay’ character and its expressive chalk-limestone terroir. Though the estate’s family roots trace back to the early 20th century, its modern identity was shaped by Florence and Quentin Vincey, who took over in 2014 and began a new chapter focused on organic and biodynamic viticulture, rooted in respect for the land and natural fermentation principles.
The Vinceys pursue authentic terroir expression over quantity. Each parcel is vinified separately, using wild yeasts, no filtration, and no chemical intervention in the vineyards. Their work blends Burgundian precision with Champagne craftsmanship – meticulous, patient, and deeply attentive.
Domaine Vincey Champagnes are defined by purity, structure, and minerality rather than dosage. Each cuvée has its own distinct personality, faithfully expressing the Oger Grand Cru terroir – its cool chalk energy, saline edge, and precise acidity.
Blanc de Blancs – refined, mineral-driven, and delicate, where ‘Chardonnay’ reveals both floral brightness and taut, saline elegance.
Millésime (vintage cuvées) – concentrated and complex, with notes of matured citrus, smoke, stone, and buttery brioche; these wines have remarkable vitality and excellent aging potential.
All wines are aged on lees for 3–5 years, gaining texture, depth, and a fine creamy character, while preserving a vivid mineral tension that defines their style.
All Domaine Vincey vineyards lie within Oger Grand Cru, one of Champagne’s 17 classified Grand Cru villages. The soils here are rich in chalk and limestone, providing ‘Chardonnay’ wines with precision, verticality, and a long, saline finish.
