Interlude n°4 Blanc de Blancs is a limited-edition Grand Cru Champagne from the village of Chouilly, one of the most prestigious terroirs in the Côte des Blancs. This Blanc de Blancs is produced using the “Tirage au moût” method, in which the secondary fermentation is carried out with natural grape must rather than added sugar.
The Champagne reveals aromas of lemon zest, white peach, green almonds, and sea salt, subtly complemented by brioche notes typical of top-class Blanc de Blancs grown on chalky soils where Chardonnay thrives.
On the palate, the wine shows a firm structure and vibrant acidity, accompanied by a chalky, saline character. The flavour profile balances citrus freshness with a finely integrated, creamy texture. The finish is long and expressive, with lingering minerality and a pronounced saline impression.
Chouilly Grand Cru is one of the most renowned villages of the Côte des Blancs, distinguished by its limestone and chalk soils, which give Chardonnay exceptional complexity and aging potential. The southern exposure ensures optimal grape ripening, while cooler nights preserve precise acidity and aromatic purity.
The Champagne is aged on fine lees to highlight subtle brioche notes, structural depth, and a naturally creamy texture.
Serve at 8–10 °C. Pairs well with oyster salad, lemon tuna tartare, or butter-fried flounder with cauliflower purée.
Champagne Domaine Vincey is a grower Champagne estate located in the village of Oger Grand Cru, in the prestigious Côte des Blancs region. Here, Chardonnay vines grow on limestone-rich soils, cultivated using biodynamic principles and a minimal-intervention approach in the vineyards.
The Vincey family’s winemaking tradition dates back to the early 20th century. The estate took on its modern identity in 2014, when Florence and Quentin Vincey assumed leadership and began a focused transition toward organic and biodynamic viticulture.
The younger generation of the Vincey family is committed to expressing authentic terroir character. Each parcel is vinified separately, wild yeasts are used, wines are unfiltered, and no chemical treatments are applied in the vineyards.
