Red dry
An exceptional wine made from the extremely rare 'Caberlot' grape variety, which was first identified in the late 1960s in an abandoned vineyard. This unique grape is cultivated exclusively at the Il Carnasciale estate with the utmost respect for nature. The harvest is carried out entirely by hand.
The grapes are picked and fermented in small stainless steel tanks (8–10 liters), where the temperature is kept below 28–29°C. Each vineyard parcel and each harvest day’s grapes are vinified separately. Only a minimal amount of added sulfites is used during winemaking.
After malolactic fermentation, the wine is aged for 22 months in carefully selected French oak barrels, 60% of which are new. Two-thirds of the barrels are made from Tronçais oak, while one-third comes from Allier and Vosges oak, with a light to medium toast. The wine is bottled by hand, unfiltered, and aged for an additional 16 months in bottle.
The wine reveals deep aromas of herbs, red berries, chocolate, oak, vanilla, and iris. This is a serious wine, known to few, yet highly prized by wine collectors.
Serve at 16 – 18 °C with game, beef steaks, stews, or carpaccio drizzled with truffle oil, as well as roasted portobello mushroom with Parmesan cheese.

Caberlot is the only grape of its kind in the world – genetically and in flavor profile it lies somewhere between Cabernet Franc and Merlot. Though the variety was discovered by chance, it has become a rare symbol of what nature and human respect for it can create.
The estate follows strict organic viticulture principles: no chemical fertilizers, herbicides, or pesticides are used. All vineyard work – from pruning to harvesting – is done entirely by hand. Each vineyard plot, and even each harvest day, is vinified separately, preserving the unique character of each micro-terroir. Only minimal amounts of added sulfites are used during winemaking.
