One of the most refined and elegant examples of Saint-Aubin 1er Cru, showcasing Hubert Lamy’s mastery and his precise interpretation of Burgundy’s white wine style. This wine unites precision, elegance, and mineral tension, crafted entirely from ‘Chardonnay’ grapes grown in the distinctive “Les Frionnes” parcel.

The aroma reveals notes of white peach, lemon zest, brioche, and white flowers, complemented by a vivid minerality and a subtle nutty undertone. On the palate, the wine offers a medium body, bright acidity, and a creamy, refined texture, leading to a long, elegant finish where freshness, salinity, and citrus tones intertwine beautifully.

The “Les Frionnes” parcel lies in the southern part of the Saint-Aubin appellation, at the foot of the slope, on limestone-clay soils with scattered stones. These conditions allow ‘Chardonnay’ grapes to ripen with precision, preserving a pure aromatic profile and a delicate expression of terroir.

About brand

Humbert Lamy is a young and rapidly rising Burgundian winemaker based in the village of Saint-Aubin, near Chassagne-Montrachet. Although his first bottles appeared only recently, they immediately caught the attention of both sommeliers and collectors for their precision, clarity of style, and exceptional sensitivity to terroir.
After studying at the Beaune viticulture school and gaining experience in several prestigious domaines, Humbert decided to pursue his own vision – crafting wines that capture the essence of the Saint-Aubin and Chassagne landscapes through classical Burgundian aesthetics combined with a modern, thoughtful approach.

Winemaking Philosophy

At the heart of Humbert Lamy’s philosophy lies respect for terroir and natural balance. His vineyards are farmed using organic and biodynamic methods, with no herbicides or synthetic fertilizers. His goal is not to shape the wine, but to let it speak for itself.
Fermentation is carried out with indigenous yeasts, and oak is used with great restraint – only 15–25 % new barrels, aimed at adding subtle texture rather than overt flavor. Maturation usually lasts 12–18 months, allowing the wines to evolve naturally and unfiltered.

His white wines, made from ‘Chardonnay’, display crystalline minerality, a gentle creamy texture, floral and citrus aromas, and perfectly integrated oak.
