This mezcal is crafted using authentic methods: the agaves are roasted in an underground, stone-lined pit fueled by oak wood, then crushed by a mule-drawn stone wheel (tahona). Fermentation takes place in wooden vats using wild, naturally occurring yeasts, followed by double distillation in copper pot stills.
