One of the most distinguished Côte des Blancs Blanc de Blancs, crafted exclusively from old-vine Chardonnay grown in the prestigious Grand Cru vineyards of Cramant and Chouilly. This is not a wine made every year, but a synthesis of exceptional vintages and exceptional sites, perfectly reflecting the Diebolt-Vallois family philosophy of absolute terroir purity.
2015 was a warm, sunny vintage, allowing the grapes to reach excellent phenolic ripeness while preserving the hallmark acid backbone of the Côte des Blancs. Fleur de Passion is produced solely from the first pressing, fermented and aged in oak barrels, without aggressive intervention — aiming not for power, but for depth, precision, and long-term aging potential.
The aromatic profile is deep, mature, and layered: lemon zest, ripe apples, white peaches, and pears intertwine with acacia blossom, almonds, brioche, and wet-stone minerality. With time in the glass, notes of honey, hazelnuts, subtle smoke, and chalk emerge, creating a calm yet highly concentrated aromatic expression.
On the palate, the champagne is tense, silky, and impeccably precise. The acidity is vibrant yet rounded by extended aging, while the bubbles are extremely fine and perfectly integrated. Flavors unfold with citrus freshness, white stone fruit, creamy nutty tones, and a clear limestone-driven structure that delivers energy and definition. The finish is long, dry, and mineral, marked by an elegant balance of bitterness and salinity.
