La Combe aux Moines, meaning "Valley of the Monks," is a Premier Cru vineyard situated in northern Gevrey-Chambertin, bordering the Grand Cru Ruchottes-Chambertin. Its steep, east-facing slope ensures optimal sunlight and drainage, while the predominantly limestone and marl soils impart minerality and finesse.
‘Pinot Noir’ grapes are hand-harvested and meticulously sorted. Fermentation occurs in stainless steel vats with controlled temperatures to preserve fruit purity. The wine then ages for 16 months in French oak barrels, with 40-50% new oak and the remainder in once-used barrels.
Serve at 14-16 °C with beef stew, venison roast or braised cheeses.
