Description

Selles-sur-Cher PDO is a traditional, handmade cheese made from raw goat’s milk.

Aged for around 10 days, the cheese is distinguished by its natural rind coated with vegetable ash. During maturation, the rind develops naturally occurring yeast and mould patterns. Depending on the season, it may display black, blue, green or yellow hues – a natural result of the ageing process that gives each cheese its own unique appearance. The interior remains snow-white, soft and smooth, while the texture gradually becomes firmer and the flavour more intense with maturation. The aroma reveals fresh dairy and delicate herbal notes, complemented by the refined, elegant character of goat’s milk.

Selles-sur-Cher PDO is delicious enjoyed on its own, served as part of a cheese board, or paired with fresh bread, crisp crackers, honey, fig jam or seasonal fruit. It pairs especially well with fresh, mineral white wines made from Sauvignon Blanc or Chardonnay grapes (without pronounced oak influence), as well as dry sparkling wines. For a red wine pairing, choose a light Pinot Noir or an elegant Cabernet Franc, both of which complement the cheese’s increasingly rich flavour without overpowering it.

Ingredients: raw goat’s milk, salt, bacterial cultures, rennet, colouring: vegetable carbon.

Nutritional values (per 100 g): energy 1237 kJ / 298 kcal, fat 25 g, of which saturates 18 g, carbohydrates 1.8 g, of which sugars 0 g, protein 19 g, salt 1.4 g.

Keep refrigerated at 4–8 °C.
