Description

Le Sangle is a traditional soft cow’s milk cheese matured with a band of spruce or fir bark wrapped around its rind. This wooden band not only helps the cheese maintain its shape but also contributes to its distinctive aromatic character. Le Sangle belongs to the family of so-called “banded cheeses” (sangle), whose unique maturation method allows the cheese to remain exceptionally soft while developing delicate woodland and woody notes.

During maturation, a thin and delicate rind forms around a rich, creamy interior that can become almost runny as the cheese ripens. The aroma reveals notes of butter, fresh cream, mushrooms, damp forest floor and subtle hints of conifer wood. On the palate, it offers a rich milky sweetness, nutty nuances and elegant savoury complexity, complemented by a long, gently earthy finish.

Le Sangle is best served at room temperature as part of a cheese board or enjoyed simply with fresh rustic bread. It also pairs beautifully with boiled potatoes, cured meats and light appetisers. Mineral-driven Alpine white wines made from ‘Jacquère’, ‘Altesse’ or ‘Chasselas’, as well as elegant sparkling wines, are particularly well suited to highlighting its creamy texture and subtle woody character.

Ingredients: pasteurised cow’s milk, rennet, salt, dairy cultures.
