White dry
The Sauvignon Blanc vines are grown at a height between 400 and 800 meters above sea level. The soil is originated from the erosion of the Dolomites. A portion of the must is fermented in stainless steel tanks and a part in barrique, then it all ages in the same containers for about eight months in contact with the fine yeast. Pale straw yellow color with greenish hues. The nose is seduced with a colorful bouquet of aromas, including elderflowers, white peaches, complex notes pinned with dried fruits and Asian aromas. On the palate, it releases a lively and sapid acidity with mineral notes, while the ending notes are very persistent and stimulating and characterized by a pleasant fullness and elegance.
Serve at 12-14 °C with tuna tartare, veal with tuna sauce, white meat and slightly spicy Asian dishes.
A release of 6,000 bottles, the Franz Haas 2018 Sauvignon (closed in a screw cap bottle) was a little slow to open, and my sample showed some of the initial flintiness that could signal faint reduction. After keeping the wine in the glass for a while, I came back to find expressive aromas of yellow rose, tropical fruit, peach and minty apple. That flintiness remains and morphs into a vague minerality that also characterizes the bouquet. I was previously unfamiliar with this wine, and it is great to see a pure expression of Sauvignon Blanc from Franz Haas. Fruit comes from high-altitude vineyards, and the wine is partially fermented in neutral barrique.
